Starwest provides you with an extensive selection of cinnamon, including a variety of whole stick sizes, cut and powder forms. We offer four varieties of cinnamon: Cinnamomum cassia, Cinnamomum burmanii, Cinnamomum lourairii (Vietnamese cinnamon that is slightly different from Cinnamomum cassia), and Cinnamomum zeylanicum (Ceylon). Cassia, which is preferred in the United States, has a spicy, sharp flavor; and Ceylon has a light, sweet, more delicate flavor. With both of these species, the dried bark is used as a spice. The unmistakable aroma of cinnamon usually evokes dreams of hot cinnamon rolls from the oven. Although it is available throughout the year from Starwest, the fragrant, sweet, warm taste of cinnamon makes it a perfect spice to use during the winter months. Cinnamomum burmanii is almost identical in flavor and taste to cassia, while Vietnamese cinnamon has a slightly sweeter taste and a much higher oil content.

Cassia bark (both powdered and in whole, or "stick" form) is used as a flavoring agent for candies, desserts, baked goods, and meat. It is also specified in many curry recipes. A few quick serving ideas: Enjoy one of the favorite kids’ classics – cinnamon toast with a healthy twist. Drizzle flax seed oil onto whole wheat toast and then sprinkle with cinnamon and honey. Simmer cinnamon sticks with milk and honey for a deliciously warming beverage. Adding ground cinnamon to black beans to be used in burritos or nachos will give them a uniquely delicious taste. You can also make healthful sautéed lamb with eggplant, raisins and cinnamon sticks to create a Middle Eastern inspired meal, and add ground cinnamon when preparing curries.
